兴化是江苏省历史文化名城，古称昭阳、楚水，历史文化底蕴丰厚。兴化所处的地理位置，是被称为“锅底洼”的里下河地区中央**洼的地方，平均高程仅1.8米，是名副其实的“洼中之洼”。由于兴化所处的里下河平原地势低洼，历史上多有遇水先淹、无水先旱的记载。面对这样的生存困境，勤劳勇敢的兴化先民在对抗洪水的过程中，不断探索、总结，在沼泽高地之处垒土成垛，并在实践中积累了丰富的垛田生产知识和经验，逐渐形成了天人合一，与环境高度协调的垛田生产系统和生活系统。2013年5月，“江苏兴化垛田传统农业系统”作为沼泽洼地土地利用模式的典范入选农业部第一批中国重要农业文化遗产，成为当时江苏唯一入选的项目。2014年4月，“江苏兴化垛田传统农业系统”又顺利入选联合国粮农组织全球重要农业文化遗产保护试点。作者李明教授曾经多次带领学生前往兴化调研，对兴化垛田形成的自然、历史原因进行考证，对垛田农耕技术进行挖掘，对兴化独特的水乡文化、饮食文化进行探讨，并将调研经过和结果著成本书。
